Happy first day of summer! It has been raining here for the past two days where I am, near Cologne, Germany, but the sun has just begun to shine and I think I’ll kick off this first day of summer with a colorful bowl of homemade salsa. This is a very easy recipe and rather versatile, you can serve it with corn chips, tacos and burritos or it would make a fresh and colorful addition to any party spread. I hope all of you are enjoying your first day of summer and the sun is shining today wherever you are!

Fresh Salsa

  • 6 Tomatoes chopped
  • 1 Small Red Onion (or half a large one) diced
  • 1-2 Jalapenos (or other variety of hot pepper) minced
  • 3-4 Tablespoons Fresh Cilantro chopped
  • 1 Lemon juiced (about 3 tbs)
  • Salt and Garlic Powder to taste

Chop the tomatoes and remove the hard part of the cores. Add to a large bowl with the diced onion. When mincing the jalapenos you can remove all or some of the seeds to make the salsa more or less hot to your liking. I added about half the seeds to get a medium salsa. Add the hot peppers and chopped fresh cilantro to the bowl along with the juice of one lemon. Mix everything together well. Season with salt and garlic powder to taste. Enjoy!
